How to make our Kale & Quinoa Burgers Falafel Recipe

We’ve decided to create something a bit different with our Kale & Quinoa Burgers, putting a Strong Roots twist on a traditional falafel meal. We serve the burgers in pita pockets with homemade hummus, a tangy onion pickle, crunchy lettuce and slices of fresh tomato. Take a look at our recipe below and try out this handy meal at home.

 

Ingredient Checklist:

  • 2/3 Kale & Quinoa Burgers
  • Pitta Pocket
  • Lettuce leaves
  • 2 chopped tomatoes

 

For the Pickled Onion Topping:

  • 1 chopped onion
  • 1 tablespoon cider vinegar
  • 1 teaspoon sugar
  • Pinch of salt

 

For the Homemade Hummus:

  • 400g of Chickpeas
  • 1 tablespoon tahini
  • Squeeze of lemon
  • 1 clove of garlic
  • Pinch of salt

 

Method:

After popping 2/3  burgers into the oven for 12-15mins at 200˚C,  begin making the pickled onion topping.

Method:

Place ingredients in a bowl and leave to pickle for 20mins.

 

Homemade Hummus:

Method:

Place ingredients in a bowl and blend.

 

Once the burgers are ready, place them into a pita pocket with lettuce, sliced tomato, onion pickle and a large dollop of hummus.
